Ballykeefe Single Estate Whiskey
Ballykeefe Distillery is the first Single Estate Family Farm Whiskey Distillery in over 200 years, where all barley is sown, grown, harvested and distilled on the farm. This makes it a uniquely ‘field to glass operation’ and marks the true revival for the craft of distilling. We are also fortunate to be located in Kilkenny, where the first written reference to Whiskey came in the Red Book of Ossory, in 1324.
Whiskey production is at the heart of everything we do at Ballykeefe Distillery. Triple distilled in our bespoke, Irish designed, Italian made copper stills, we are producing our Whiskey from Ballykeefe grain and crystal-clear deep well Ballykeefe water. As an authentic artisan, handcrafted operation, it is a hearts only distiller’s cut which means all heads and tails are discarded.
We began laying down casks to mature in August 2017 and have filled a number of different types of Whiskey including Single Malt, Pot Still and Rye. The first of our Ballykeefe Distillery Whiskey will be released, in limited quantity, in the last quarter of 2020.
